  7. Para la salsa rosa. Montar una mayonesa con 1 huevo y aceite de oliva y aliñar con: El zumo de media naranja, un chorrito de zumo de lima, 1 cucharada de salsa picante y un chorrito de ketchup.
  8. Batir todo hasta dejarlo homogéneo (sin cortar la emulsión).
  9. Cortar los pepinillos y el cebollino en rodajas finitas y echar en la salsa rosa ahumada.Guardar en la nevera.
  10. Para la puntillita. Romper las claras con la mano y echar 1 cucharada sopera de agua (mezclar).
  11. «Espolvorear» la clara sobre una sartén con aceite muy caliente. Freír por dos lados y sacar a una servilleta. Echar sal al gusto
  12. Para la burger. Calentar mucho una sartén y, sin aceite (o con muy poco), freír las hamburguesas 1min por cada lado.
  13. Poner 2 lonchas de queso cheddar en una de ellas y 2 de queso de sándwich en la otra.
  14. Tostar el pan en la misma sartén que has hecho las hamburguesas con la grasa que ha soltado la carne.
  15. Montar la hamburguesa con todos los ingredientes: Salsa rosa ahumada en una cara del pan, carne de hamburguesa, una capa de la puntillita (clara frita), otra carne de hamburguesa, un poco más de puntillita y salsa de yema de huevo en el otro pan.
