  4. El arroz debe quedar a media cocción a este punto, es por eso que no ponemos la cantidad correcta de agua como si estuviéramos haciendo arroz normal. El arroz debe de terminar de cocinarse en la panza del cordero.
  5. Con el cordero lo lavamos muy bien y procedemos a condimentarlo con sal, pimienta negra y un poco de ajos. Con las manos lo masajeamos bien para integrar los sabores
  6. Cuando el arroz ya esté frío procedemos a rellenar el cordero
  7. Con hilo y aguja lo costuramos y agregamos a la fuente un vaso de agua para que el cordero se esté hidratando.
  8. Ponemos el horno a 350 F por hora y media y metemos el cordero tapado con papel aluminio
  9. Luego subimos la temperatura a 400F y cocinamos por otras cuatro horas más o menos. Cada dos horas más o menos revisar y mojar con el mismo jugo que el cordero va soltando
  10. Revisarlo al cabo de unas 4 horas y ver si está blando y suave pinchándolo con un tenedor. Si ya está listo (depende del horno) puedes ponerlo destapado en broil para que se dore unos 5 minutos a que se dore, vigílalo para que no se queme y listo.
  11. Cortamos y servimos en una fuente carne y arroz, mojando con el mismo jugo la carne para que quede humectada.
