- 5 jitomates (tomate rojo)

- 3 hojas epazote
- 3 cdtas sal
- 1 chile habanero
- Salsa blanca (K'ol)

- 2 cdas harina
- 1 cda sal
- 1 cdta aceite
- 1 cda manteca de cerdo
- 1 cda alcaparras
- 30 g aceitunas
- Utensilios: bowl chico, plástico film, vaporera

- Retira el celofán y la cera del queso. Rálla el queso y reserva.
- Picadillo. Prepara el picadillo de acuerdo a la receta : Picadillo con Almendras.
- Para preparar la salsa de tomate:
Se cortan los tomates, la cebolla blanca y el chile dulce en pedazos grandes.
Se licúan con 3/4 taza de agua.
En una olla, sofríe con la manteca de cerdo el ajo y la cebolla morada.
Cuando tenga un color dorado, añade lo que licuaste y el epazote.
Déjala cocinar, unos minutos, cuando el color esté más intenso añade la sal y deja cocinar unos minutos más, si deseas que la salsa sea picosa puedes añadir un chile habanero, solo ten cuidado de que no se reviente. - Para la salsa blanca K'ol.
Hierve el caldo de pollo con las aceitunas, alcaparras y epazote. Cuela.
En un olla coloca la harina y diluye un poco de agua, a fuego bajo, añade poco a poco el caldo sin dejar de mover.
Agrega sal y una cdta de aceite, sigue moviendo hasta que quede espesa pero no demasiado, debe quedar con la consistencia del atole. - Ahora haremos quesitos individuales.
En un bowl pequeño coloca un cuadro de plástico film y añade el queso rallado - Agrega una porción de picadillo al queso.
Añade más queso rallado encima. - Envuelve con el plástico y haz un nudo. Repite con el resto del queso y el picadillo.
- Pon a hervir agua en una vaporera, ve colocando lo quesitos.
Deja que se cocinen por unos 15 a 20 minutos. - Sirve colocando una base de salsa blanca, el queso y la salsa de tomate por encima.
