  4. Dejamos reposar los chiles en un plato y seguimos con el caldillo. Moler los jitomates, caldo de pollo, sal, el ajo y cebolla. En una olla ponemos un chorrito pequeño de aceite y ya caliente agregamos el caldillo hasta que hierva.
  5. Hacemos el capeado, separamos las claras de las yemas. En un bowl llevamos las claras a punto de nieve con ayuda de una batidora, poco a poco agregamos 2 yemas de las 3. Listo el huevo metemos con cuidado los chiles y ponemos un sartén a fuego medio con aceite para que se cueza el huevo. Usar volteador de metal para que no se pegue tanto.
